Tea Time "Japanese Tea Ceremony"

The fifth collection to join the Teatime Around the World series is Japanese Tea Ceremony “Cha-no-yu”.

The host boils water and stirs each cup of tea to perfection, delighting guests with a graceful ritual from start to finish, with an air of peacefulness… This centuries-old tradition still appreciated today, began around the 15th century with Sen no Rikyu. Everything from the teahouse setting, utensils, sweet delicacies and to the tea itself, embodies the deep spirituality and aesthetics rooted in Japanese heritage. It is a traditional art to be enjoyed engaging all of the five senses.

Matcha

Matcha powder is made by grinding Tencha (a type of green tea) with a tea grinding mortar into a fine powder. Matcha powder and hot water are placed in a tea cup and stirred with a bamboo whisk called Cha-sen. In Japanese tea ceremony, there are 2 types of tea – Koicha (thick) or Usucha (thin). Koicha has a thick flavor and a paste-like texture while Usucha has a lighter flavor and fluid texture that froths when stirred.

Nerikiri

Nerikiri is a category of traditional Japanese confectionery made by heating a mix of Shiro-an (white bean paste) and Gyuhi (soft mochi) to create a sweet, thick paste which is crafted into beautiful forms. Sweet delicacies are an important part of Japanese tea ceremony, with the role of playing up the deliciousness of tea, and are selected to suit the season, theme and style of the tea ceremony. Nerikiri are artistic, fresh confectionery categorized as Omogashi, the highest form of hospitality at tea ceremonies, and perfect for pairing with Koicha.
